Would S.K.S. Please pass on couple of tried/easy cake recipie's
for 1100 Watt Microwave oven.
So far all my cakes have turned out so dry tasting . Need advice.

I have found that cakes don't do well in microwave - dry & of course pale as they don't brown!!

Have tried shortbread in microwave which is better & OH cooks bread using a recipe with Guinness I think !!!

I have one that I make often and is lovely and moist. The secret is not overcooking it and take it out as soon as it starts leaving the sides of container.

6oz butter or marg
6oz sugar
3 medium eggs
6 oz self raising flour
8in cake tin
cook on medium for 6 mins
Microwaves differ so keep your eye on it and take out as soon as it starts leaving side of container.
Half this amount makes a lovely steamed pud if treacle or jam is put into bottom of basin before cooking.

You can make beautiful fruit cakes in the microwave
I used to do them every year instead of xmas cake ;;
