I have a recipe for this, Sharron, but it's called Impossible Pie. It's lovely.

Somebody brought me a recipe book from a boot sale.There was a newspaper cutting stuck in it with this recipe which I did not believe but I have tried it and it is gorgeous.

You either whisk together in a bowl or chuck in the food processor:-
4 eggs
1/4(quarter)cup margarine
1 cup white sugar
1/2(half)cup plain flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups milk
1 cup dessicated coconut
1 teaspoon vanilla essence

You pour it in a 10" pie dish and bake it @180c (I did 150c in the fan oven) for about 45 mins or until the top is golden and a knife comes out clean.

Unbelievably it comes out as a custard tart with pastry,perhaps not the finest you have ever eaten but well edible,on the bottom,a lovely layer of firm custard in the middle and coconut on top.

Now I don't like coconut and partner doesn't like egg custard but we both enjoyed this.Have ago,so might you.
