I bought a chicken to roast for Sunday dinner and vegetables to serve with it. Saturday night OH says 'I don't fancy a roast dinner for Sunday'. Mm,Mm I thought. So what could I do. I gave it abit of thought whilst watching Strictly,X Factor,Casualty, and came up with the perfect answer. Chicken Maryland. Not had this for years. We used to serve it at a Ye Olde Derbyshire Inn where I was a silver service waitress, about 35yrs ago. |

I made Chicken Maryland recently too -but it was chicken breasts , bananas done in breadcrumbs , which didn`t freeze well, used to do corn fritters too. I can make 3 lasagnes from- 1 lb of mince-enough for 2 or 3 people. I made 3 chicken , broccoli , condensed soup dish with 3 chicken breasts. Ros xx |

I'm with you Julia. Two manky carrots and an onion became carrot and coriander soup on Saturday. Sunday's beef casserole fed two of us last night with roast veg and cabbage and the other two portions will be eaten tonight with cous cous and veg. Whatever I produce for dinner tomorrow, there will be enough left for Himself to heat up on Wed when I am living it up in London with my daughter. |
