Does anyone have any favourite recipes for chicken or fish.

Took OH to diabetic clinic yesterday and consultant wants him to eat no red meat or bread or potatoes or pasta.

I'm at a loss as to what to give him. The dietician was useless but has referred us to someone more senior. By the way my OH hates chicken and fish. I can see I have a battle on my hands:-)

Any suggestions would be very much appreciated.

Oh boy do you have a problem no red meat via doc or chick and fish thanks to OH
leaves pork
no spuds or pasta leaves rice.

rice is great as yu can mix all veg into it ..will have to check my recipe books, I tend to throw it all in together

Thank you for your suggestions they are very much appreciated.

OH been put on new drug which aids weight loss as well as regulates his blood sugar which Diabetic consultant and Rheumatoid Arthritis consultant want him to do. Rheumatoid arthritis as been trying to get him to have no red meat for years. It seems they have now ganged up on him lol

Arthritis consultant screens for everything every 5 weeks and passes relevant information to colleagues which is great as anything is picked up really quickly.

Oh dear - if OH doesn't like fish!
Does he like soy sauce?
A favourite of my children - and something I always do for my grand daughter (who hates potatoes), is rice with peas and sweetcorn, with tinned tuna - it can be smothered in soy sauce (a la my eldest!!) to totally disguise any flavour.
Cook rice, add frozen corn & peas towards the end, when cooked add drained tinned tuna, mix & serve.
Lots of Omega - good for arthritis!

My poor grand daughter - it's granny's - It'll be tuna & rice!! LOL

have you tried stir fry chicken.?
Cut breast of chicken into thin strips and fry in a little olive oil.
add half an onion sliced and cook until soft.
Add any green vege, eg beans or peas or brocolli
add either diced carrot or red capsicum.
Add half cup water and put lid on, reduce heat and steam until cooked. watch it doesnt dry out and burn.
Sauce either soy or sprinkle with Worchester, not too much.
salt to taste.
Can be served with rice or cuscous.

OR
using the same ingredients make a casserole, putting all in together as well as a small tin of apricot necter. cook in the oven as you would for oven bake.
Omelettes are another good replacement for red meat and can be served with plenty of veges

Tell your man losing weight is way easier than losing a limb.

My o.h. eats less red meat now he is diabetic but doesn't mind chicken or fish in moderation, we have pork sausages often but baked in the oven and the good ones with little fat and leek, apple or other things added for variety. Does you o.h. mind salmon or is it all kinds of fish? Some people don't like it because of the bones but it's easy to get fish with no bones in these days or just one or two large ones which you could maybe (excuse the pun) fish for before serving lol

Be careful with soy sauce, it has a lot of salt in it.

Thank you for your suggestions. He loves omelets. I'm trying to put together a couple of weeks worth of menus so that we don't get that bored feeling about what we are eating and get tempted back to the dark side:-) Eating out is going to be a problem too but I'm sure the odd treat won't do him any harm.

Gave OH salmon with lemon and herb sauce for dinner last night, which he ate without complaint. I think his problem stems from childhood. His mum hates fish, smell, texture and taste, so OH never had it until he met me who said all fish tastes different. He is willing to try anything now.

He has managed to lose 2 stone since August after his diabetes spikes and he was recalled to GP on urgent appointment. But that was with Atkins which is only good for a quick start and not a lifestyle choice. So consultant was pleased with that. Eating no bread is the hardest. No toast for brekki. He is finding no pasta hard, as this is his favourite food.

instead of bread, are you able to source rice cakes?
in Aus we have things like crackers, cruskits and the like made from rice. some arent very nice as they are dry, but with all sorts of things on top, can make a great breakfast.
then there are also gluten free pancakes which one can get used to.

Yes we have rice cakes over here. A bit like cardboard but not too bad with some toppings.

Breakfast at the moment is porridge no sugar but with fruit.

I'll look out for gluten free pancakes

This is from a ‘High Blood pressure’ cook book, which you could adapt. If you juggle the orange/fruit juices, it can swamp out the taste of fish if OH doesn’t like it. You could omit the fresh fruit and just use cartoned orange juice and bottled lemon juice.

Citrus grilled Plaice ( or any other white fish) Serves 4

1 Onion peeled and chopped
1 Orange Pepper deseeded and chopped (gives colour if nothing else, so any pepper)
175g/6 oz long grain rice
2 tbs lemon juice
150ml/ 1/4 pt orange juice<<<<<<<<
225ml/ 8 fl veg stock
4 x 175g/6 oz plaice fillets, shinned
1 orange
1 lemon
25g/1oz half fat butter or low fat spread
2tbs fresh chopped tarragon (could use less of dried)
Black pepper
Cooking oil

Heat a v little oil in a large frying pan then sauté onion, pepper and rice for 2 mins

Add orange and lemon juice, bring to the boil and add half the stock. Simmer for 15-20 mins or until rice is tender, adding remaining stock as necessary.

Preheat grill. Finely spray (or wipe over) base of grill pan with oil. Pace the plaice fillets in the base and reserve

Finely grate orange and lemon rind. Squeeze the juice of half of each fruit.

Melt butter or spread in a small saucepan. Add the squeezed juice and grated rind, half the tarragon and use to baste the fish.

Cook one side only of the fish under the preheated grill, med heat for 4-6 mins, basting continuously.

Once the rice is cooked, stir in the remaining tarragon and season with black pepper.

My OH does not like chicken - however he has it often - he just does not know it

I use minced chicken breasts /skinned boned thigh meat and cook it exactly as i would beef / pork mince

I always add onions garlic finely chopped peppers to it -

Make meat balls - dry roasted and then finished off in a home made tomato sauce

I also make cottage pie - with mashed cauli and broccoli topping - add an oxo /and or caramelized onions to make mince brown


I also make small chicken balls - (cooked in oven ) and then threaded on skewers with mushrooms onion courgette etc and griddle them

These recipes look very good, and I will try them myself.
I am a type 2 Diabetic, have been for four years - to my knowledge. Who knows how long before, and it went undetected.
I do not take any medicines or insulin, but get by on diet control. I have never had a sweet tooth, so that has never been a problem, but do occasionally have, and it is only occassionaly, have a chocolate, although previously said I do not eat them. I have just bought two tins of 'Christmas Chocolates, but by Easter, they will go to the grandchildrens homes, untouched.
I eat very little red meat these days, though I do like it very much. I now eat more chicken and fish than I have ever done. I do eat alot of veggies and fruit, and I think this helps and makes up for what I can't have. Luckily, we grow plenty ourselves.
What I am trying to say, is watch the overall diet, not just the red meat situation. I have not progressed from type 2 to type 1, in nearly four years, so I must be doing something right.

I am a big meat eater - beef and lamb especially - OH will have beef as his first choice always - so to reduce our red meat intake several years ago - I took to ""mincing my own"" - basically to "hide" the fact I was using chicken from OH ----who I quote " hates chicken"

I am not sure of the sugar content - as it does not effect us - but I have a bottle of "graving browning" - bought when I was last in England --- i teaspoon will make the chicken mince look exactly like beef mince

We do not eat pasta - but have made pasta dishes with the mince for other people - and I have never been asked

What mince is this ?

I also do not have to mince my own any more - as here you pick what meat you want and the butcher minces it for you

Thank you for your suggestions. I will definitely be mincing the chicken as you suggest Irene and trying the those recipes.

Things don't seems so daunting now I have a few ideas.

Julia unfortunately he has a very sweet tooth so no biscuits or chocs in our house:-(.

Argggh! Just looking back at the citrus grilled plaice recipe and one ingredient was missed out

150ml (1/4 pt orange juice) now added in with <<<<<

Terribly sorry if someone has already tried it. :(

these last ideas are great
and certainly going in my recipe book.
hard to know how to disguise the hated ingredient. OH can always pick it!!!
do you think one can mince fish??
