Christmas Leftovers

I found some interesting recipes this morning. This one looks good.

MINI TURKEY CAKES (makes about 30)

potatoes, approx 350g, peeled, chopped
garlic, 2 cloves, crushed
butter, 30g, chopped
onion, 1, finely chopped
cooked turkey meat, 250g, chopped
coriander leaves, chopped, 1/3 cup,
eggs, 1, plus 2 extra, lightly beaten
fresh breadcrumbs, 2 cups
oil, to shallow-fry
rocket leaves, to serve

SWEET CHILLI SAUCE
water, 1½ cups
sugar, 1 cup
ginger, 5mm piece, peeled,
sliced
long red chilli, 1, finely chopped
mint, ½ cup, picked leaves
lime, 1, juice
fish sauce, to taste

Place potatoes in a medium saucepan and cover with water. Bring to the boil on high. Reduce heat to medium and simmer 8-10 minutes, until tender. Drain well. Mash with garlic. Cool slightly.

Meanwhile, melt butter in a small saucepan. Saute onion 1-2 minutes, until tender. Add to potato with turkey, coriander, egg and 1/3 cup breadcrumbs. Season to taste and mix well. Chill 1 hour.

SWEET CHILLI SAUCE: In a small saucepan, combine water and sugar. Stir over a low heat until sugar dissolves. Add ginger and chilli, and simmer 3-4 minutes, until mixture becomes syrupy. Remove from heat and cool slightly. Add mint, juice and fish sauce.

Preheat oven to slow, 150°C. Line an oven tray with baking paper.
Shape 1½ heaped tablespoons of potato mixture into flattened patties. Dip in extra egg then roll in remaining breadcrumbs to coat. Place on tray. Chill 15 minutes.

Heat oil in a large frying pan on medium. Cook patties in 3 batches, 1-2 minutes each side, until golden. Drain on paper towel. Keep warm in oven. Top with rocket leaves and serve with sweet chilli sauce.

I made these today. Made 12 largish ones, instead of 30 (they must be tiny!).

I used a mix of half turkey half ham. I didn't have enough coriander (my poor plant is a bit bedraggled), so used a mixture of coriander & parsley.

They were OK, but I don't think I'll make them again. Rather have the cold ham & turkey :-D

my dil cooked the dinner this year ,she gave me the turkey remains , for some soup.

I took a packet of Quorn turkey slices out of the freezer last night.

Sandwiches with that cranberry sauce I made last night,stuffing,bread sauce.

There was plenty of cranberry sauce made last night so there will be sandwiches with that and stilton as well.

Sandwiches,that's my Christmas.

WE MASH
the left over mash with the left over sprouts and make sprout burgers

with the left over turkey we make turkey and bacon soup
which i freeze and uses over the next couple of weeks

and the left over beef we have sandwiches :-D

We always have a hot dinner on Christmas Eve. The rest of the week is mostly cold turkey & ham with salads. That gets a bit boring after a while (aren't we spoiled!).

We're in Oz.. Roast dinner isn't usually on the menu again until April at the earliest :-)

I make quiches/flans & frittata with the ham, but I'm looking for more recipes.

You can't beat Bubble and Squeak. Use up left over veggies, with a slice of whatever meat you had and a fried egg on top.

As far as we are concerned, its part and parcel of Christmas. :-D

Fruitcake crumble

150gr butter
1/2 cup icing sugar
1+3/4 cups plain flour
1/2 cup ground almonds
Beat icing sugar & butter until creamy, add flour & almonds & stir until mixture forms a crumble.

400gr can pie apple (or cook your own)
300gr leftover dark fruit cake, crumbled

Grease & line a 20cm square baking tin, overlap sides with the paper.

Reserve 1 cup of the crumble, add to fruit cake & gently mix together.

Press remaining crumble into prepared pan. Top with apple. Scatter the fruitcake/crumble mix over the top.

Bake for 35 minutes, until golden.

Please let us know your favourite recipes!

My mother used to make turkey/ham croquettes. I wish I had her recipe. I've tried, but can't get them just right. If anyone has a recipe for them I'd appreciate it.
