LEFTOVERS. What gastonomic delights, erm concoctions, did you manage to create from your leftovers, this holiday.
We didn't really have any, as such. I put the stuffing balls and the pigs in blankets on the bird table, and hung up the crackling from the piece of pork we had on Christmas Day.
I must admit though, that I was more than ready to make a pot of fresh veggie soup, by Thursday, with no meat in site.

As we were at daughters we didn't really have any leftovers. We brought some cold meat back with us, enough for one meal, but we'd only had the turkey on Christmas day as SiL did steak and kidney with dumplings (made by daughter) on Boxing day. Any leftovers disappeared down 20 year old Grandson's throat. The two mels since we have been back have been salmon and a fry up (OH's speciality). :-D Small piece of gammon tonight but boiled not roasted, and roast Chicken tomorrow (NY Eve).

As well as pile of sandwiches, I've made turkey curry, turkey a la king, and leek and mushroom soup with stock from the bones. From leftover gammon, tomorrow we're having Boston baked beans, also will make a cheese and ham pasta bake and a quiche, plus any scraps will go into lentil soup.

Just call me Queen of the leftovers! ;-)

We bought the Turkey breast from the butchers as our contribution to the Xmas fair. Was fresh white meat rolled and although a bit expensive we prefer it to supermarket turkey and we get all white meat which is preferred,

The piece was over 11lbs so we bought back a big chunk that I have curried today with peppers /mushrooms/sultanas/ carrots etc and once its cooled it will give us at least 4 curry dinners for the two of us in the freezer

Strange how some of us prefer dark and others white meat isn't it? I prefer the dark myself, always think it is not so bland. I am not a great lover of turkey at all actually and usually only buy it at Christmas, Unless I buy a drumstick which I have discovered cooks beautifully in the slow cooker, very tasty and tender.

Ann, you were lucky to come back with the cold meat, and able to make a meal, after your travels. We had the soup, which I was ready for, and to suit the OH, the next day had Ham, Egg and Saute Potatoes, and then moved onto Scampi and Chips. I soon get ready to give my stomach a rest from too much food.

Geordiein Norfolk. WOW, I would not call you just the Queen of Leftovers, more the Queen of Ingenuity. What a long way, you made things go. I think I would have done something similar, if I had, had a bird, but we had the piece of Pork.
I did save the liquor from the baking, of the Ham/Gammon,as the stock for the Veg. Soup Also put some pieces into the freezer, together with the already saved chicken pieces, to make some Chicken,Ham and Leek Pies during this next week.
Us ladies certainly know how to save money, don't we.

They had turkey scallops last night but they were nothing to do with me.

I still have some stuffing to go in my sandwiches and the container of my cranberry sauce slid out of the fridge and smashed goddammit!

Christmas cake on toast tonight I think!

Mummo, you should have melted the jelly down again, and made it into some sort of puddings. LOLOL

Sharron, shame about your Cranberry Sauce.
Not started on the Christmas Cake yet, but it should be good. I have been 'feeding' it for weeks.

By the way Sharron, did you receive a reply PM from me last week. Not sure if it 'sent' or not.

I think these telly chefs could learn alot from us. LOLOL

Julie OH loves to his turkey curries . He likes home cooked but knows better to complain on shop bought.

I hate re-hashed leftovers,so unless OH eats cold meat next day it gets dumped...I know a waste but it wont ever get eaten,,,,,,,

No your'e not strange Ann........its me,,,,,,OH dont mind cold meat from joint but only beef and will only have it next day... I prefer meat as a roast dinner.

I dont save leftovers.

I'm the same as Kay - don't like left-overs! I only ever do enough veg and potatoes for the meal. I don't mind a bit of cold meat the next day, but after that any left goes in the bin or the dog!! Only 2 of us this year so we just had a small chicken.

Sparkling Ann, I am the same as you, in that I love the Bubble & Squeak the day after, with the cold meat. Eat it with a blob of brown sauce and a slice of bread and butter. That is as far as my joints go, as being only the two of us, I don't buy one that is too big.

My Hubby made bubble and squeak on Boxing Day,his one and only Christmas culinary venture.
Last night I made meatballs from the last bits of turkey and gammon mixed with sausagemeat, when the Grandchildren came for tea. The Christmas meats are now well and truly gone. Now, what can I make with New Year's leftover roast beef.........

Geordie, how about a nice heart-warming and filling shepherds pie.
I would do that if I had left over beef. Not having a New Year's dinner tomorrow. A little can go a long with me, these days. So, I'm not having a full dinner again, until Sunday.

i dont waste any meat, its far to expensive. we had roast beef for xmas dinner, the left overs were sliced, covered in gravy and frozen, i divided the meat into 3 seperate containers. that will make 3 meals for 3 of us, just have to cook veg to go with it. i will do the same when i cook the leg of lamb.
