Have just baked Nigel Slater Lazy Loaf and it was so easy to do and the grandchildren had fun doing it with me

I love cooking bread but dont have very much luck with it.Can you share the recipe please. ;-) ;-)

It does not use yeast but bicarbonate of soda and you do not have to put it in a warm cupboard to rise

ingredients

8oz wholemeal flour
8oz plain flour
1/2 teaspoon sea salt
1 teaspoon caster sugar
1 teaspoon bicarbonate of soda
12 fl oz buttermilk

method
preheat oven to 220c/425f gas8. put a large casserole dish and its lid in to the oven


in a large bowl mix the flours sea salt, sugar and bicarbonate of soda together with your fingers. Pour in the buttermilk , bringing the mixture together as a soft dough. Working quickly ( bicarbonate of soda will start working imnediatley) shape the dough into a shallow round loaf about 1 1/2in thick

Remove the hot casserole dish from the oven dust the inside lightly with flour then lower in the dough. Cover with the lid and return to oven

The bread should be ready after 25 minutes. Remove from oven and leave in place for 5 minutes before turning out. Soda bread is best eaten warmt

You can do soda bread on any old baking tray.Traditionally you shape it into a round and cut a cross in it.

Now I am going to have to make some!

That is wheaten soda bread or soda farls made with purely white flour - if no buttermilk use yoghurt. Treacle soda is lovely.

Find soda bread, hot, cold or toasted OK!

Beer Quickbread

I like to make this because it doesn't use up a whole can of beer and it does seem a shame waste the rest.

2 and a quarter cups of self raising flour
pinch of salt
30 grams of chopped butter
2 teaspoons of sugar
half a cup of beer
half a cup of water
1 tablespoon of milk
1tablespoon of sesame seeds (yeh?!)

Pre-heat the oven to 210c.
Brush oven tray with oil or melted butter.
Sift flour and salt into a bowl.
Rub butter into flour and salt with your fingertips until it resembles crumbs.Add the sugar and stir to combine.

(Stick it all in the food processor!)

Make a well in the centre,add almost all of the beer and water.
Mix lightly to a soft dough using a flat bladed knife.Add more liquid if necessary.

(Wind the liquid in the food processor)

Knead the doughbriefly on a lightly floured surface until smooth.

(Spin it round a bit longer in the food processor then poke it about a bit when you turn it out if you think it looks like it needs it)

Divide the mixture into four portions.Shape each into a ball which you flatten slightly with your hand and mark with a cross.
Place ,well spread out on the baking tray.
Brush the tops with milk and sprinkle with the sesame seeds (if you are that kind of a poser).

Bake for about 15 minutes.

You can make one large one.
