Thought I'd cheat with Aldi pancakes (for savoury as well as sweet), and layered them with mushrooms, leeks and bacon in sauce, and topped them with cheese before baking in the oven.
Sounds good? Nah, should have made my own - just too lazy these days!

Pancake mix made from some of those eggs that have been rolling free range round fields, milk from local dairy & Sainsburys plain flour is resting waiting for me to cook.

Problem is we are full from the beef stew that has been simmering all afternoon in the slow cooker :-D Might have to stand till tomorrow.

Yes Carol, my mum maintained batter was better if it was left to rest then beaten again, something to do with the gluten in the flour.

My pancakes needed help......they had to be lifted out of the pan as they had set like concrete.

Just can't cook! :-D
