This has been corrected on Ancestry, if you have asked GR to do so here and they haven't, ask them again.

It is Brewer on here and FMP for 1891 so not sure what the problem is?

The name is transcribed as Brewer on Findmypast.

Her name may have been Susannah but she may just have called herself Susan. That doesn't mean the census is wrong. She probably just gave her name as Susan if that is what she was normally known as. You will find that names change all the time on census returns.
