Ellen Jones born Ireland or Sunderland 1841?

My great great grandmother was Ellen Jones, according to my cousin and some of the census returns she was born Ireland (he says Cork)
others say Sunderland and I've even heard mention of Chester which could be possible as there was an Ellen Jones from Chester hundred/Jarrow but the age is earlier than the one who is definitely the mother of my great This is all the info I have on Ellen so any help would be very much appreciated

1861 census for 15 Spring Garden Lane Sunderland. All b Ireland except Annie
Mary Meighan widow 35

Ellen Jones 26 sister unmarried
Annie Jones 5 niece b Sunderland

1871 - 43 Spring Garden Lane all shown as b Sunderland. I think Ireland was more probable as Mary Meighan was her sister and was b Ireland
