I whisk the eggs up, use a really hot pan, cook one side and then turn over and put the filling in, which I have previously cooked. then fold over..

Our favourite filling is chopped tomatoe and mushroom

Thats got me thinking, have not had lately, must have it one day.

The trick is to bring the cooked edges from the outside in with a fork until most of the egg mixture has cooked moving the pan around so that the uncookd mixture gets to touch the pan then let it settle. Many people overcook omelettes.

Also remember that eggs carry on cooking once off the heat.

Personally I would not add salt - not good for you!

If you use Gillian's method and whisk the egg whites first, then add the yolks, you end up with a really fluffy omlette, - nothing like scrambled egg.

There have been threads before warning about the ziploc bags, apparently they aren't safe to cook omelettes in. I have never tried them, couldn't face it if the stuff went everywhere.

easy, whip the eggs with milk, add a little salt, get the pan nice and hot, cook one side then put the pan under the grill so cook the top side, lovely XX..
