Julia
So happy you liked the scones. Your most welcome
If you want to make savoury ones you can do it with Soda Water instead of the Lemonade then you won't get any sweetness in them.

Mau
Hope you have tried them by now they are so easy to make

I can make a batch while the kettle is boiling and within 20 minutes have Scones for any visitors that happen to turn up they are also nice with Butter and Jam if you haven't got the cream in stock

Happy Scone making ladies

Mac - just a bit of best butter on mine, no jam or cream, and we hve very little 'shop bought' made up foods here. Everything has to be home-made

WhackyJackieInOz - thanks for the Lemonade Scone recipe. Have just had a sample with a cuppa, and very nice too. We are not big cake eaters, and so I am not big cake baker, so a scone is ample.
I was baking a batch of Quiche, and Meat and Potato Pies this morning, so I thought I'd try the recipe while the oven was on. I added a few sultanas to the mix, which I found abit moist when I had put all the ingredients in, so added alittle more flour. Next time, I am going to try cheese and chopped onion, and I will also try chopped cherries.
For anyone that is interested, I got 8 good sized scones from this mix, and I would recommend it to anyone who has trouble making scones.
Once again Jackie, thanks for the recipe

Best tips for making scones, apart from a good recipe,

First thing to remember, is to handle them as little as possible. Don't spend too long on rolling them out. Once you've added the liquid, knead the dough as quickly as possible, roll quickly and when cutting, do NOT twist the cutter, instead use the flat of your hand to 'punch' the cutter through.

Don't use too dry a mixture either...keep it loose, and don't over flour the board, or the second roll will be far too dry.

They usually rise about twice the hieght of the rolled mixture...so if you want them high...have them thick, about 1/2 inch will do it. Use a hot oven too, to cook them quickly, about 190c.

Hi Pamela
Cool hands and not too much liquid. The trick is not to roll dough out but to gently pat with the rolling pin. and when you cut out listen for the 'puff of air' then you know your scones will rise beautifully :O) .....I've made thousands!

Think I'll give your lemondae scones a try Jackie

Now I don't mind making scones but just don't like cooking generally! There's always one isn't there?

One thing is not to roll them out too thinly. Try them with grated cheese for a savoury scone and then, when cooked, toast lightly. Scrummmmy.

My Mum used to make amazing scones. But for what ever reason I have never been able to do good ones.I just buy them now.I did a Cream Tea afternoon for charity a few years ago ,had the proper clotted cream posted up from Cornwall ,but had to buy the scones as I wouldn't have dared serve my own up lol.

Ditto I can't make them either even though I went to catering college for 2 yrs I can turn my hand to anything but scones are a no no, my auntie who in my opinion makes the scrummiest ones ever, even stood over me telling me when to stop rubbing in, when to pour in liquid, when to stop kneading, when to stop rolling (they were the right consistency) she even done the oven to the right temp and they still turned out FLAT and nothing like a scone should be. After that I gave up. I buy them in now saves any aggro and they taste nice too.

Hi Pamela
This is a recipe I always use and it is so simple and easy and they always turn out good. They are delicious
I have even added Fruit to them if you like Fruit Scones about 3 ozs. Sometimes I add just a Little Castor Sugar if you want them sweeter. About a Tablespoon
Give it a try and let me know how you go.
Regards
Jackie
