To go on Jax lettuces...


Lemon Garlic Salad Dressing
Prep Time: 10 minutes
Ingredients:
• 2 Tbsp. extra-virgin olive oil
• 1 Tbsp. fresh lemon juice
• 1 small clove garlic, minced
• 1/2 tsp. finely shredded lemon zest (optional)
• 1/2 tsp. salt
• 1/4 tsp. freshly ground black pepper
• 1/4 tsp.dry mustard
Preparation:
Whisk all ingredients together in a small bowl or put them in a jar and shake to blend. Use immediately or store, covered and chilled, up to 1 week (olive oil will solidify in the refrigerator but will melt quite quickly at room temperature again).

Caesar salad dressing
Preparation Time: 5 Mins
Cooking Time: 3 Mins

Serves: 8

Ingredients

1 egg
150ml (approx) sunflower oil
1/2 tsp black pepper
1 tsp red wine vinegar
1 tsp capers
1 tsp worcestershire sauce
juice 1 lemon
pinch caster sugar
4 anchovy fillets
1 tsp dijon mustard

Instructions

The recipe this week is a perfect accompaniment to any summer salad but works best with cos or romaine lettuce.
Place all ingredients except the egg and sunflower oil in a food processor and whizz until combined. Put egg in a pan of boiling water and boil for approx 1 1/2 minutes. Remove from water and cool quickly under cold water. Remove shell and add egg to processor. To make the dressing, keep food processor running and carefully drizzle in oil until you have an emulsion. If you add the oil too quickly the dressing will separate and not emulsify. When dressing salad, toss with grated parmesan.

I like Honey Mustard Dressing

INGREDIENTS
120 ml vinegar
235 ml mayonnaise
5 ml prepared mustard
4 g sugar
4 g finely chopped onion
120 ml honey
1 g minced parsley
2 g salt
0.5 g pepper
120 ml vegetable oil
Add to Recipe Box

DIRECTIONS
In a small bowl, combine the vinegar, mayonnaise and mustard. Add sugar, onion, honey, parsley, salt and pepper. Slowly pour oil into mixture while mixing briskly with a wire whisk. Refrigerate until ready to serve.

Thank you Carol, am doing a salad tonight with homegrown lettuce and salad onions, Lemon Garlic Salad Dressing sounds quite delightful, and I am going to have a salmon steak to go with it.
