Homemade Chunky Bean, Lamb and Cabbage soup.

Near Crieff Ros, we are renting a chalet near one of the lochs. Don't have the info to hand as in bed now! It's 1:15 Sunday here and have to work in the morning.
It will feel cold to me, we had 50C last Sunday.

Joy, am home in less than two weeks, having a holiday in Scotland for a week and then back over here, will try and make it for us up there lol.

Tricia, it does sound "windy", but no effects yet lol.

Sounds like a "Windy Soup" that one Keith.
Love making homemade soup so will certainly try it the ingredients are all things we like
So may I copy your recipe Keith please?

Elizabeth, Jamie Oliver I am most certainly not lol, cooking is not my favourite activity!
But this recipe is simple so thought I would have a go at it and it turned out well.

Just made this for my lunch, can recommend it, very tasty. I had to use small cucumbers instead of courgettes as could not get them here. Rest will freeze for another time.

Ingredients:-
2 tbsp Olive Oil
200 gms lean lamb, diced
1 Onion diced
2 sticks celery diced
2 small carrots diced
1 clove garlic finely diced
2 courgettes diced
400 gms chopped tomatoes
250 gms canned red kidney beans
2 cups water
Salt & pepper to taste
1 small green cabbage cleaned and roughly chopped.

Method-
Heat olive oil in large saucepan over medium-low heat. Add Lamb and stir fry for a minute or two. Now add Onion. Stir until onions transparent. Add Celery. Again stir for a minute and then add carrots, garlic and courgettes. Stir fry for a couple of minutes before adding tomatoes and beans. Add water, increase heat to high, cover and bring to rolling boil. Remove the lid, season to taste and let it simmer.
Add cabbage to the boiling soup, add more water if needed, bring back to boil and cook briskly for 5 minutes. When ready to serve, garnish with Parmesan.

Serves 6.
