Thanks Maz and Julia,

so far have 2kg of strawberries, hulled and halved (they are huge fruit) sitting in a bowel with 1kg of sugar. Then tomorrow I will add the other 1kg of sugar and juice of 2 lemons and hopefully I will get some decent jam!!

We can get channel 4 here, most get it via 1.8 -2m satellite dish, but you need an address in UK to get the card. We receive ours through a device known as a Slingbox which streams it through the internet from a friends router in UK. Works very well, we just get the freeview through the ariel, but could get satellite or cable streamed as well.

Will let you know how it works out.

Rosalind, if you manage to get over your way, the programme on Channel 4 called River Cottage ( Wednesday night here) I think they advertised that Hugh Fearnley Whittingstall would be making Strawberry Jam next week . I got four good recipes off the programme last night

PS I'm not suggesting your recipe Maz is not worthy of trying, and would quite happily sample a jar for you. Don't do jams and pickles these days for health reasons, but always loved a drop of home made

Hi Rosalind, just made some this week :-) I use a Good Housekeeping recipe

3.5 lb of fruit with 3 tbsp of lemon juice. simmer about 20 mins until v soft. take from heat and add 3lb of sugar. stir til dissolved. add knob of butter. fast boil about 20 mins and test for a set. once reached, remove from heat and leave to stand 20 mins at least (stops fruit rising in the jar). then pot and cover.

and it's yummy lol

Anyone make their own? Looked at couple of recipes, most seem to use equal quantities of sugar to fruit, Delia uses 4lb fruit and 3lb sugar.
Only ever made it with certo before, but can't get that here.
