cheap healthy dinners?

1 onion = chop finely.
500gm minced lamb
Handful of chopped coriander/parsley
Handful chopped mint or more if you like mint lots, which I do
Equal quantity grated bread or grated potato, whichever you prefer
Salt and pepper

Mash up together. make meatballs,about 2 cms round. Shallow fry (best) or bake in oven on 200. until browned and cooked through.

Serve with salad and tomato rice: chop and fry an onion. Add rice for 2 mins. Add appropriate amount of water and lots of salt and pepper and cook fast until water's gone (10 mins ish) then switch off heat and leave to finish cooking. Lemon juice, olive oil, yummee.
