Roast Potatoes...

What potatoes do you use....i use Maris Piper. and they all had bruising

MP or King Edwards and as a treat I cook them in goose fat, or oil with butter....

if you coat them with semilina it makes them crispier, apparently. I havent tried that one yet tho:)

Sounds like the frost got to yours Julie, hardly surprising this winter....even the best clamps wouldn't have stopped that frost penetrating.

At the moment we are working through a supply of Marfona.
They are good all-round potatoes that cook well without going mushy.
I've very rarely seen them in supermarkets.

We bought them from someone who deals direct with local farmers.

Julie, unfortunately, you will find this happens with most maincrop/late potatoes, as they have been out the ground, and knocking about storage units for many months now. I use, when I have to buy at this time of year, the potatoes sold in the supermarkets as 'Rooster Potatoes', but I wouldn't say they are any better or wrose yhan any other varieties.
What I do is peel and par boil them in salted water (opt). until they are just beginning to soften on the outside. The, drain, put back in pan, put on the lid, and give a good shake. This will make the outsides rough, enabling them to form a nice crisp. Then do as Whirley suggests, and put them in goose fat. Results are lovely an crispy.
Gwen, many farmers seem to grow that variety around here, and you can buy from the roadside. Also Cara's, which I am not very fond of.

never heard of them Gwen, they sound pretty good. Julie they were probably not handled too well once dug up, hence the bruising.

Im wondering if its cos i kept them in the porch it was too cold

Like Gwyn i am using Marfona just bought my second sack yesterday, you can only buy them from farm shops, not sure if they are just here in Kent.
They are a lovely potatato good for everything.

Valinkent, they are grown here in Derbyshire also, and sold by the farm shops/roadside. I think they must be heavy croppers, so worthwhile for the farmer to grow this variety.

Sainsbury frozen ones in Goose fat does me BUT I do do ACTUAL Roasts at Xmas if we have family and use Reds and do my Delia fan pots that the family always want
