Nice vegetable recipe

I made this up as I went along. My husband, who not a fan of veg (but I make him eat them!) liked it so I thought I would share.

Whole French Beans, topped and tailed and boiled until just tender
Small tomatoes, halved
Pinch of Salt
1 teaspoon of Sugar
Black pepper

I 'ball' of frozen spinach, thawed
Oil
'Shavings' of Parmesan cheese

Heat the oil, throw in all the ingredients, season and cook until the tomatoes are cooked through but not too squishy. Add the Parmesan cheese

Serve immediately whilst piping hot.

EDITED as I left out a couple of things before!

I shall try it with sliced runner beans (boiled first!) when summer eventually arrives!

I also omitted to mention I added a few shavings of Parmesan cheese.

It's a good job I'm not writing a cookery book, leaving out instructions and ingredients!

Here's an easy one your husband may like,if you like quiche type ones..

VEGETABLE FRITTATA
Serves 4 Cooking time 35 minutes

olive oil spray
1 Tbs. olive oil
500g frozen stir-fry vegetable mix,thawed
6 eggs
1/2 cup milk
mixed salad leaves to serve

Preheat oven to 180degrees C.( about 350F)
Spray a 20cm.square cake pan with oil.Line base and sides with non-stick baking paper,allowing the two sides to overhang.
Heat oil in a large non-stick frypan or wok over med-high heat.Stir fry vegs. for 3 mins. or until soft.Transfer to prepared pan.
Whisk eggs and milk in a bowl until combined.Season with salt and pepper.Pour over vegies.Bake for 25-30 mins. or until set and light golden.
Set aside for for 10 minutes to cool slightly.Serve with salad leaves.

I used the baking paper but think I'll try it without it next time.You can use this recipe for any vegies.Next time I will use a chopped onion and a few cloves of garlic,stir fried before I add the other vegies.I think that will make the recipe even tastier! This is a good recipe when you don't have much time.

Nutritional information-per serve-12g protein,,14g fat,5.5g carb.,3.5g fibre,840kj (200 cals).

Thanks Margot! I'll definitely give this a try.

It will be a nice meal for my daughter and boyfriend when they visit as she always says she's on a diet when I'm cooking (grrr!) and this is a healthy dish!

Aren't those oil sprays brilliant?

I can't pretend that I do the healthy bit with the frying pan but they are excellent for greasing tins.A quick puff saves all that smearing about with the butter paper.
