Hi Muffy

Well done!

We've only 'spoken' on a couple occasions. I love baking but my cakes are rubbish. I would love your recipe; it sounds just the thing for Easter.

epiphany?

Seriously, well done, and it will encourage the girls to cook eventually too, they will remember this...and remember how much tastier home cooked food really is.

Muffyxx

Muffyxx Report 7 Mar 2010 21:46

That's the one EPIPHANY lol.

They LOVE it TW in fact they ask me not to buy the cakes but to make them myself ...which i'd never in a million years have thought anyone would ask of me lol.

Birdi...i can post the recipe if you want...

No I didn't Teresa, when I went to local shop to get the flour and cinnamon, which i didn't have, they didn't have any and i didn't have time to go upto to A**a on the Sunday to get them, but I have noted it in my recipe book and will do it soon. I made some carrot and swede mash and put it in the freezer.

Thanks, Muffy

It's in my binder so I can't lose it!

It's a pity they've removed all the comments on this site 'due to technical troubles' as they are often the deciding factor on whether I make something or not. I can recommend the Granola recipe.

I can vouch for this one Birdi.

I'd put it in the middle shelf and keep turning it at regular intervals to make sure it's done throughout...and the top IS supposed to be crispy(and quite dark looking) and the middle moist. It's a very sloppy mixture but with a bit of patience is well worth the effort x

TeresaW Report 7 Mar 2010 21:59

oo I like granola. Not sure if I can eat it yet, but when the teeth are settled I'll give it a go.

Muffyxx

Muffyxx Report 7 Mar 2010 22:02

I'll look the granola up ...always happy to try something new.

I'm doing dauphonaise (sp) potatoes for dinner tomorrow....and the girls have asked me to do a chocolate/strawberry marble cake next..so chickens allowing I'll be cooked up tomorrow lol.

I'm glad I'm forgiven Allam LOLOLOL xx

This is THE chocolate cake to make. Not cheap, but the only cake except Christmas cake that impressed my guests. I was trying to impress my daughter's new boyfriend LOL

Wildgoose

Wildgoose Report 7 Mar 2010 22:13

No flies in this cake. It's delectable.

Want chocolate heaven? Try this for size. (Not for weightwatchers)

MISSISSIPPI MUD PIE

Ingredients
For the base
300g/10½oz bourbon biscuits, crushed
75g/2½oz butter, melted
For the filling
85g/3oz dark chocolate, minimum 70 per cent cocoa solids
85g/3oz butter
2 free-range eggs
85g/3oz muscovado sugar
100ml/3½oz double cream
For the fudge sauce
150g/5½oz dark chocolate, minimum 70 per cent cocoa solids
150ml/5½fl oz double cream, plus extra to serve
3 tbsp golden syrup
175g/6oz icing sugar, sieved

Method
1. Preheat the oven to 180C/365F/Gas 4.
2. Mix the biscuits and melted butter together in a bowl. Press the mixture into the base and sides of a 23cm/9in springfrom tin. Chill in the fridge for 10 minutes.
3. For the filling, melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water. (Do not let the base of the bowl touch the water).
4. Meanwhile, whisk the eggs and sugar together in a bowl for 5-6 minutes, or until thick and creamy. Fold in the cream and melted chocolate mixture. Pour into the chilled springform tin and bake in the oven for 40-50 minutes, or until just set. Remove from the oven and set aside to cool completely.
5. Meanwhile, for the fudge sauce, heat all of the fudge sauce ingredients in a saucepan, stirring regularly, over a medium heat until the mixture is smooth and glossy. Set aside to cool for 5 minutes.
6. Spread the sauce over the cooled pie and chill in the fridge for 20 minutes. Serve with double cream.
