Its cold, raining and I think I may have to crank the heating up a notch.

There is only one thing for it.

Get the cassorole dishes out quick!!!!!!

I have just put an italian chicken and bacon one in on gas mark 6

He is brave. first offspring is on face book and second is on x box with OH.

Offspring no1 says he has enough time in the cold at school in P.E and footy training.

Offspring no2 walks from house to car and car to uni and had enough exercise at school to last next 3 years!!!!

They loved playing out when young.

Must have felt the cold less

Hi Jane

Here it is

4 skinless chicken breasts
12 bacon rashers roughly chopped
1 onion roughly chopped
2 sticks celery roughly chopped 1 carrot roughly chopped 2 garlic cloves crushed
4fl oz chicken stock
2 cans chopped tomatoes
2 bay leaves salt and pepper to season

dry fry chicken till colour changes
remove and transfer to casserole dish
dry fry bacon for 2 minutes add onion celary carrots and garlic and cook till onions are soft
Add chicken breasts, tomatoes seasoning, and stock and bay leaves

It can be cooked on hob until tender or in oven.
i put mine on gas 6 if in hurry for 45 mins or longer on gas 3.

The good thing about casseroles is that as long as they dont dry out and the meat and veg are cooked they can be left for a while.

It could be even started on hob and transfrered to slow cooker.

I have not made it before so will be dishing up soon.

Hi Jane,

Casserole was lovley but maybe just a little less tomatoe.

Maybe 1.5 cans rather than 2
