Elderberry Chutney

Has anyone got a favourite tried and tested recipe for elderberry chutney, please?
I made some years ago, which we didn't like, but would like to try again.
The bushes near here are laden with fruit this year and many of the berries are ready to pick.

I've never tried making wine.

I hope to pick the berries before the birds do.
I don't mind them eating them, but it's what happens later that I don't like !
If I use the fruit, I might save on the washing .

Hiya Gwyn, googled and found this… I have a baby elderberry bush so in a couple of years I shall be beating the birds to it as well, lolol!! ;¬))


The elderberrry chutney recipe is a variation on her apple chutney so I will give you the recipe for the apple chutney and her variation for elderberries.

1 lb onions -weight when peeled and finely chopped
1/2 pint malt vinegar (white)
2 lb cooking apples (weight when peeled and cored)
1 teaspoon pf pickling spices
12 0z soft light brown sugar
40z raisins or any other dried fruit
salt and pepper to taste

Chop the onions and put into half the amount of vinegar and simmer gently for ten mins. Cut the apple into 3/4 inch dice and add to the pan with the rest of the vinegar, the pickling spices (tied in a muslin) the sugar, the dried fruit and a little seasoning. Stir over a low heat until the sugar has dissolved and then simmer steadily, stirring from time to time, until the consistency of a thick jam. Remove the bag of pickling spices. Spoon the chutney into hot jars and seal down.

The variation for elderberry chutney is

follow the apple chutney recipe but use 1 lb of elderberries and 1 lb of apples. For a less strong flavour use only 8oz elderberries and 1 1/2 lb of apples. In each case the weight of apples is when they have been peeled and cored.

Never heard of Elderberry Chutney ...

But I have a lovely Runner Bean & Rhubarb Chutney.

If anyone wants to use up this ingredient.

I used to stick them in muffins instead of blue berries but the BBC's James Wong makes Elderberry Jelly and Jam that is supposed to be really good for you - cuts down cholestrol - colds and flu preventative etc.

I suppose if one is clever enough there is all sorts one can do - I even see where someone made Elderberry throat lozenges.

I laughed when I saw this in part of a recipe for making juice:
To get all of the juice, you can put the rest of the berries in an old T-shirt, clean of course, and squeeze the juice out. This works best when using a T-shirt that is clean.
