Butterscotch sauce.

Does anyone know the easy way of making this sauce in the microwave.

I used to make it years ago as an alternative to custard,but have forgotten the recipe,which,I think,involved butter,brown sugar and evaporated milk.
I bought two Jamaican Ginger cakes and thought butterscotch would compliment them.

Hi

Microwave Butterscotch Sauce

Serves 6 to 7

INGREDIENTS
•1 tablespoon of cornstarch that has been well dissolved in a little water (1 to 2 tsp.)
•1 1/4 cup of light brown sugar packed
•1/2 cup of cream or half & half
•2 tablespoons of light corn syrup
•1/8 tsp salt
•1/4 cup of butter=1/2 of a stick
•1 tsp of vanilla


DIRECTIONS
Mix all the liquid ingredients well, dissolved corn starch, cream, corn syrup and the salt.

Mix in the sugar.

Cook in microwave at HIGH for 3 minutes, then add half of the butter and only partially stir in.

Continue to cook for another 2 minutes.

Add remainder of butter and stir in.

When cool add the vanilla. May serve cool or warm.

Thanks for replies ladies,I have trawled through pages on Google,and now am drooling,

However,still not found the easy microwave version that I used to use.

I think that i must have found it on a tin of evaporated milk,and it only took a few minutes to make,brilliant if you have a housefull of kids to fill up.

If I do find it I will put the recipe on here.

This is a simple recipe Nina

Butterscotch Sauce
-----------------------------

60g of Margarine
30g of Dark Brown Sugar
60g of Golden Syrup
1/4 of a tin of Evaporated Milk

Method
1.Melt the margarine, syrup and sugar in a saucepan, stirring continuously until the mixture startes to caramelise.
2.Cool slightly. Once cooled, lightly beat in the evaporated milk until it has thickened slightly.
3.Put in the fridge to keep cold.

Hi Nina, how could you, that sounds so yummy but I so need to lose weight!
Went on one of those machines in the chemist the other day, after it had screamed at me to get off, a strip of paper came out and told me the scales at home that I thought were wrong, aren't and I am definitely way over weight and obese! Charming!

Hi Sparks,go for it,only you care how big you are.

All my life I have struggled to keep my weight down,fluctuating between size 12 and 14-16.

Now I am a pensioner,I have decided that I don't give a monkeys,and eat what I fancy.

Now I have my GP on my back(not literally) But I don't see him very often so can put up with that.

Enjoy your food folks,you only get one life!

Might just treat myself another evening when o.h. is on late shift, he is diabetic so I have to keep naughty things away from him, he has even less will power than me lol

I used to be a size 14 when i met him 14 yrs ago but sadly now am a size 20, sometimes 18 or 22 depending on cut and type of clothing. Have turned into my Mum alright lol
