instructing son how to make a good Lancashire Hotpot. It is huge - will enjoy but OH is having smoked haddock! He will not eat it - reckon it is because he is southern - however I thought he would change his mind whilst after many many years I confessed that my pasties which he loved were made of leftover hotpot!! It didn't.

When I go to stay with an aunt in Cheshire, she always makes a very tasty Lancashire Hotpot, but puts on a topping of shortcrust pastry, which she says is the Lancashire way to do it. I've never seen this in recipe books - do you do that?

My oh from Manchester would love me to do him a "proper "one
just like his mum used to make.
We must have a meat and potato pie in the oven when we come in on New Years Eve/ morning.
Oh and another strange thing ,he insists on having custard with bread and butter pudding . Yuk

We always have custard with bread and butter pudding around here. Must be why I am 20st. LOL:OL

whenever we have eaten out, my oh always confuses the waitress.if having apple pie and is asked, with cream, custard or icecream, he says all three please and that is normal to him.lol hes a big lad.

never ever put a lid on hotpot - it is not a pie. Like Victor Meldrew I cannot believe it!! Barbra I shall check google

the only recipe there which I would say is the tradition hotpot is the one Chef2Chef. Even recommends the type of casserole dish and is the only one stating ingredients are lamb, kidneys, onion, potato, stock etc. I add some bovril and bisto granules and a long slow cook - about 4 hours even longer if you wish.

Some of them say, celery, swede, carrot and most of them do not say to layer - just chuck meat in and top with potato.

Best hotpot I ever tasted outside of family was in Birkenhead Market - i was there at 8.30 am the smell got the better of me and at 9.15 I was tucking in!!!! Quoy have sent you my recipe
