Sounds great Susan. I shall do that for my s-i-l at Christmas, as he doesn't like Xmas pud. I defrosted my freezer yesterday and found 2 bags with all those berries - trouble is the date on them was Aug 2006 lol!!

Hello all,

To those of you who are experiencing such misearbly cold weather, here is a gorgeous, easy recipe for a Berry trilfe that may just bring a touch of Summer to your table:

10cups fresh or frozen mixed berries (raspberries,blackberries,blueberries or boysenberries)
juice of 2 lemons
2 cups sugar
300g trifle sponge

Place all berries,lemon juice & sugar into a saucepan. Bring to boil, stirring gently until sugar has dissolved. Boil for 1 minute, remove and cool completely.

Cut sponge into thin sheets that will fit the bowl you are using. Lay one sheet of sponge in bottom of bowl, spoon some berries and juice on top. Cover with more sponge and layer until all ingredients are used, finishing with a layer of sponge, doused in remaining berries and juice.

Cover bowl and refrigerate for several hours. Can serve decorated with fresh berries and a dusting of icing sugar. I beat Mascapone with a little icing sugar and spread a thickish layer over trifle just before serving. Juice will have soaked right through pudding ,so top will be quite firm.

If you like a tipsy trifle, sprinkle each sponge layer with liquer of your choice. If you don't like Mascapone, serve with whipped cream either on the side or spread over trifle.

This is a really yummy pud. !!
