I have a recipe for Figgy Pudding which I have I used, so here it is. 8oz. (225 g) dried figs, 1/4 pt. 140ml. orange juice, 30z. 75g solid vegetable fat, 2oz. 50g. self-raising flour, 20z. oat flakes, 1/4 tea spoon grated nutmeg, 1/2 teasp. ground ginger, 1/2 teasp. ground cinnamon, 1oz. blanched almonds chopped, 1 orange, rind only, 3 eggs, 3 tablesp Brandy.
Stew figs in orange juice 20 to 25 mins, until plump Strain, reserving juice, then chop. Rub fat into flour, stir in oats, spices, ,almonds, orange rind, figs and orange juice. Beat in eggs and Brandy. spoon into well-greased 1 -1/2 pint pudding basin. Cover with a double layer of greaseproof paper, then a piece of foil. Tie with string. Cook in steamer for 45 mins. topping up with boiling water as necessary.
The pudding can be frozen, then thaw overnight at room temp. Reheat for 1 hour, or in microwave. Kath
