"Fillet of sole a la pagons

Fillets of sole flat done in white sauce , very little cheese.Dish them on a flat silver dish with mashed potatoes round the edge. Now fill in the centre witha sauce of scallops or oysters and prawns.Put in the oven to brown or do it with salamander (?!).

Crouts a la Brunswick

Cut out the crouts of bread round and fry. Spread on each a little anchovy paste,then put on each chopped truffle and ham, white and yolks of eggs passed through the seive. pile up high then across put thin strips of gherkins ."
