How lovely - our 'pick your own' aren't picking yet, so it will be a few weeks yet :-0

So the old man will be out blackberrying before we know where we are. I made some jam recently with last years and the rind left from making lemonade.

We don't use much jam but I like to keep him at it.

Will probably be out on Tuesday stealing the elderflowers for the cordial. Very tasty with a drop of gin.

Sharron,
Have you got a tried and tested recipe for elderflower cordial please?
Is it 'flat'? Will it freeze?
I have some flowers on a tree in the garden 'planted' by birds, some years ago.

The Tom Parker Bowles recipe. It is on Google.

You might find it hard to buy the citric acid.Pharmacies tend to not stock it any more because dealers cut heroin with it and it is probably not in the best interest of a pharmacy to have it treaced back to them.

Wine making suppliers seem to stock it by the cart-load.

Thanks Sharron. I'll take a look.

Sorry about the delay. I wasn't able to search threads or access the boards properly until today.

It is flat but if you use cream of tartar instead of citric acid it wil ferment and become elderflower champagne but will not keep once opened,

It does fteeze but freezes sticky like an ice lolly.I think it would make a lovely ice looly.
