Haven't had a fisherman or his friend for ages :-0 :-

I remember the " chip pan" lard bubbling away. I swear my OH used to look like a chip.

Nowadays he's lucky to have some once a month

Never buy it now but used to use the half and half for pastry

Basically saying, that it's a 'level' fat It has both saturated & unsaturated fats, and we actually need saturated fats!!
Recent research has shown it's no worse for us than olive oil.

Italians (you know - those whose diet is apparently much better than ours) create a drink of whisked lard.

I'm interested in it, (apart from the fact that chips cooked in lard are the best) because in the last 30 years, there has been a rise in the number of cases of ADHD in children - which co-incides with the government/health 'guru's telling us how bad Lard was, and the introduction of trans fats.

15 years ago, whilst at Uni, I looked into diet & ADHD. An English doctor gave ADHD children high doses of Fatty acids - and their behaviour changed. I've tried unsuccessfully to find the article online.
Unfortunately, looking at similar articles online, trans fats & saturated fats appear to be confused.

However, going back to lard, and related foodstuffs.
I now, for preference, drink unhomogenised milk, (which is basically fat suspended in water) because, unlike homogenised milk, it has large fat globules. These globules can't pass through the bloodstream and affect the cholesterol level - unlike the 'beaten' fat globules in homogenised milk.

And it tastes nicer :-D

My grannies knitting was bad enough - we needed a rub down with lard to get into them and looked like a row of skinned rabbits :-0
