THE STORY:
"Bugeilio'r Gwenith Gwyn" (English: Watching the White Wheat) is an 18th-century traditional Welsh love song.

It describes the tragic love affair between Wil Hopcyn and Ann Thomas (The Maid of Cefn Ydfa) from the village of Llangynwyd in Glamorganshire. Ann belonged to a wealthy farming family but Wil was only a farm labourer. Ann's mother rejected Wil and forced Ann into a marriage with Anthony Maddocks, the son of a local squire.

A few days before the marriage took place Wil left Llangynwyd. Months later Wil had a dream in which Ann's new husband had died, so he returned home. However, when he arrived he discovered that in fact it was Ann who was dying, from a broken heart. Ann died in his arms that day.

Maddocks inherited the Thomas' estate and soon re-married. Wil died in 1741, never having married. Both he and Ann are buried at Llangynwyd.

SOUTH AFRICAN COOKERY AGAIN!

MALVA PUDDING
Serves 4-6
Preparation Time: 25 minutes
Cooking Time: 45 minutes
Total Time: 1 hour 10 minutes

INGREDIENTS:

The Pudding
6 1/2 ounces Sugar (3/4 cup, 200ml, or 180g)
2 large Eggs
1 tablespoon Apricot Jam
5 ounces All-Purpose Flour (150g)
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 tablespoon Butter (a generous tablespoon)
1 teaspoon Vinegar
1/3 cup Milk

For the sauce
3/4 cup Fresh Cream (200ml)
3 1/2 ounces Butter (100g)
3 -5 ounces Sugar (90 - 150g)
1/3 cup Hot Water (90 ml)
2 teaspoons Vanilla Essence

METHOD:
Preheat oven to 350 deg F/180 deg Celsius. (NOTE: I find my convection/fan oven very hot.
Bake the pudding at 160 - 170 deg C (You know your oven -- Adjust accordingly)

Grease an oven dish. 7 x 7 x 1 1/2 inch dish. (18 x 18 x 4 1/2 cm)

Beat or whip the sugar and eggs. It's quickest in a food processor, or use electric beaters. Beat until thick and lemon coloured, then add the jelly (jam) and mix through.

Melt the butter (don't boil) and add the butter and vinegar to the wet mixture.

Sieve, or simply mix together: the flour, soda and salt.

Add this mixture with the milk to the egg mixture in the processor or mixing bowl. Beat well.

Pour into an oven-proof dish and bake until pudding is brown and well-risen -- depending on your oven and oven dish this will be between 30 - 45 minutes.

In a pot, melt together the ingredients for the sauce, and stir well.
Pour it over the pudding as soon as it comes out of the oven.

Leave to stand awhile before serving. Serve warm. Because it's rich it does not really need enhancement, but if you want, serve with vanilla ice cream

There are many variations, but I have found one with a YouTube demostration!

HERE'S THE RECIPE FOR THE CLIP

WELSH CAKES

Ingredients:

2 cups four
4 oz butter
3/4 cup sugar
1/2 cup currants
1 or 2 eggs
milk if needed
1/4 tsp allspice
1/2 tsp baking powder

Method:

Rub fat and flour together until quite fine.
Add sugar, currants, spice and baking powder.
Add eggs and enough milk to make a soft dough.
Roll out on a floured surface, to a thickness of 1/8".
Cut into rounds.
Set electric frying pan to 350 degrees or if using a stovetop frying pan cook over medium.
Spread a bit of melted butter over the surface of the pan.
Place the cookie rounds into the pan.
Cook until the tops look like they are starting to dry out then flip the cookies and continue cooking until a light golden colour.
Remove from pan to cooling rack and sprinkle with white sugar or fruit sugar.
