My Greatgrandfather John Jessop Smith born 1860 Attercliffe-cum-Darnell. He was a Blacksmith. John died before 1910.
His wife Sarah Ann Holden came to Australia between 1910 &1915.Their children Agnes, Alice, Mary,John Robert, Jean, Joseph and Samuel.
John's father Samuel born c1838 Attercliffe-cum-Darnell. I have no info on John's mother.

I believe the marriage in 1856 Sheffield between Samuel Smith and Ann Jones is yours.

This therefore seems to mske this parentage more likely for John, particularly as this Samuel is a Blacksmith's Striker. The address is also on the same street as in the 1891.

I think I have the right family for you, it all seems to fit together.

I couldn't find a birth for a John Jessop Smith to prove his parentage, although there are plenty of John Smiths!!

It may be that he was registered as just John, and then Jessop was added whn he was baptised.
