So this is more likely to be Owen's family:

Owen born c 1818- first marriage to Jane Jones 1939 (he's listed as painter Kyffin Square). Jane dies in 1856 (Kyffin Square listed on burial). So it is likely that Owen was born in Kyffin Square and his parents were Owen Parry and Jane Jones.

Agreed- It's always best to work backwards from what you know.
As it's likely this is Owen in 1891, you now know that he has a brother John- this might aid in finding the correct birth for Owen when you get to that point.

I think you need to slow down- are you sure about that death record? In 1881 you say he's listed at St. Paul's Terrace- In 1891 his wife still resides there- she's listed as married (not widowed). I think the burial below is for the death record that you mention- the address is wrong- so not your Owen.
Burial: name(s) OWEN PARRY Age 37 Birth year 1854 Death year 1891 Burial year 1891 Burial day 21 Burial month Jan Parish Llanbeblig Place LLANBEBLIG Country Wales County Caernarvonshire Residence: Crown Street <<<<<<<<<<<<<<
