Irish Records - how do I access them?

Bridget Whitty b 1930 October 9th is my mother. She was orphaned when she was very young and raised in convents.I have her birth certificate but it only states her name, date of birth and place (Enniscorthy, Wexford). She told me that many Irish records were lost to a fire at the records office hence her abbreviated cert. I'm trying to find her parents, she recalled a brother and that her mothers name was also Bridget. Would I need to search parish records in Enniscorthy? This may prove difficult as I live in Australia. Any help or information would be warmly welcomed.
