I would be very tempted to buy the 1869 birth certificate to see her parents.

I would suspect that both John and Catherine, shown in 1871 are the illegitimate children of the Catherine you seek. You will also see Annie, aged 2 in the 1881 census, and she is the illegitimate daughter of Elizabeth born about 1853, who later married Charles Dickman in 1882 (DEC 1882 Bingham 7b 795). This couple are shown in the 1891 census, with Annie as a stepdaughter.

It would be likely, that if Catherine became pregnant whilst in service, she would lose her job, as the house would not want to be associated with a child born out of wedlock. As to her whereabouts I can offer no advice

The one posted on 1911 census was Catherine Flint Coupe 1842 -1923 married 1901 V7b P64 to Joseph Minkley.So not the correct Catherine.
