I would highly recommend Geneanet for families in France.
http://en.geneanet.org/
This site has many on-line trees, and excellent search facility if you are a paying member.
There is a free membership option but with restricted search capability.

I would try Cyndi's list as mentioned above, and this one is a favourite...
www.genforum.genealogy.com
from the home page go to 'Countries' and then from the list the choice is yours. Don't forget to bookmark each country for future use :-)

Unlike here in the UK most european countries hold their BMD registers locally and have no great central holding point like the GRO.

So you will need to know the area/village in most cases.

But some info is out there, so do look at the sites mentioned.

In addition google Anglo-(country) family history societies.
