MY CREDIT CRUNCH SUNDAY CHICKEN

I'm with you Julia. Two manky carrots and an onion became carrot and coriander soup on Saturday. Sunday's beef casserole fed two of us last night with roast veg and cabbage and the other two portions will be eaten tonight with cous cous and veg. Whatever I produce for dinner tomorrow, there will be enough left for Himself to heat up on Wed when I am living it up in London with my daughter.
Thursday pasta - manky tomatoes that are past being eaten raw will end up in the sauce, Friday fish and chips and then it's the weekend again.

I had started to think more carefully about what we eat and how we eat it when Himself went off to uni, with the result that our food bills are 30% lower than they were earlier this year.

Credit crunch - not in this house!

My cousin's grandson (aged 11) said the thought that 'the credit crunch' was a new breakfast cereal!

I made Chicken Maryland recently too -but it was chicken breasts , bananas done in breadcrumbs , which didn`t freeze well, used to do corn fritters too. I can make 3 lasagnes from- 1 lb of mince-enough for 2 or 3 people. I made 3 chicken , broccoli , condensed soup dish with 3 chicken breasts. Ros xx

Sounds like good thinking Julia,,,,but glad I'm not a dinner guest as the only thing I like is the mushrooms,&breadcrumbs ,,,,! mind you could coat the mushrooms in breadcrumbs for me,,:}}}

I bought a chicken to roast for Sunday dinner and vegetables to serve with it. Saturday night OH says 'I don't fancy a roast dinner for Sunday'. Mm,Mm I thought. So what could I do. I gave it abit of thought whilst watching Strictly,X Factor,Casualty, and came up with the perfect answer. Chicken Maryland. Not had this for years. We used to serve it at a Ye Olde Derbyshire Inn where I was a silver service waitress, about 35yrs ago.
So, Sunday, I carved off the breasts. I cooked the rest of the chicken, as normal, and coated the breasts in breadcrumbs, along with two peach halves, instead of bananas, and put in the oven whilst it was on, and served with tinned sweetcorn.
Today, I have striped off the meat from the carcass, and put the carcass to boil for soup stock. I then added the remains of the sweetcorn, flaked of any residue chicken bits from the carcass, and turned it into Chicken and Sweetcorn soup, enough for two days. Day one I will serve with Potato Scones, made from leftover potato from Saturday's baked potato, and tomorrow with home baked crusty bread.
Off the original carcass, I got two meals for the dog, and froze the legs for later use as either Chicken and Pasta, or Chicken,Ham and Leek Pie.
Tonight we are having Chicken and Mushroom Omlette (mushrooms left over from Saturday's evening meal), served with a salad with a sliced half peach mixed in, from the original tin of five halves.
The two other halves will be used for a sweet tomorrow, with ice-cream, after a mincemeat pie with vegetables and potatoes, second half for Wednesday with chips.
Oh, and I blanched and froze the Sunday veggies for another day.
Credit Crunch, not in my house I don't think. I am already wholeheartedly sick of forever hearing the words mentioned whenever you turn a programme on either on television or the radio.
