Add couple of spoonfuls of frozen blackberries or blackcurrant to a ripe banana and blitz in blender for fruit smoothie - full of vitamins!
Any fruit can be used also add plain yogurt if you want it creamier.

What an intersting thread! I think I'll go and make some banana loaves as I've got quite a few bananas on the turn. Any low calorie suggestions for frozen fruit would be welcomed as I've still got tons of blackcurrant, blackberries and gooseberries. I'm trying to reduce the waistline at the moment so my usual crumbles and sponges are banned!

Thanks Sue the recipe calls for a cup of sugar, so will have to see how many tbsp are in a cup, no use weighing the Splenda its is so light ....

If substituting Splenda for sugar don't forget it has to be done by volume and not by weight. So a tablespoonful of Splenda is equivalent to a tablespoon of sugar but it weighs a lot less.

Marie, my wording was a bit confusing , so this is what I meant, I have two small plates /dishes, I made a lot of cheese and onion mixture and lined the plates with pastry added the mixture to each the put a pastry lid on the top......heres the way I make it....

One or two onions chopped fine...I put them in a big basin add a teaspoon of sugar and a tiny bit of water, put it in the microwave for 4/5 mns whilst the onions are still warm I grate a lot of cheese in and stir it, the cheese will melt into the onions, then divide between the two plates as above...
bake on a medium heat until cooked to your liking, make less for just one plate, I always do two then freeze one....same thing with the apple tart...no onions though lol...

still need to do the peanut cookies, I am going to cut out the sugar and substitute Splenda, hope it works...

Just Jean, what is "two plate cheese and onion pies,and one large apple and pear plate pie"? Is it enough for one plate? I haven't heard that term before.

Thanks for the reminders about Spaghetti Bolognaise, and meatloaf-
I haven't made meatloaf for a while,it would be nice for a change.

We get regular peanut butter here,and the low fat variety,but I can't say that I've ever seen the no salt one-will have to keep an eye out for it.

Many thanks for an interesting thread,Jean.Could you please write down the recipes for the pies,they sound nice. I've got another interesting recipe for mince,if you want it I will find it and PM you,or write it here.

Just shows you dont need to waste food, doesnt it. I keep ends of ham minced to make cheese and ham omelettes.

we have lift off,this morning I made two plate cheese and onion pies and one large apple and pear plate pie,I only had a couple of manky apples so added a pear that was on its last legs, looks good....
also one soda bread ,I used out of date nut yogurt's, instead of buttermilk, added a bit of milk, that too looks scrummy...for my next trick I have pulled some pieces of fish out of the freezer, and intend to make fishcakes,.....or fish pie....

Sue that sounds good, years ago I often made a meat loaf, thanks for reminding me, I have just made a list of everything I have in the freezer, its on one of the white boards that you can wipe clean so now when we eat I can take it off....

Jean, you can get used to the unsalted one, if you really really want some.lol

My son and girlfriend lives with us and they buy there're own shopping. While sorting through the freezer last week to make space for our shopping I found.............................8 boxes of veggi burgers of theres, these have no gone down to the freezer in the shed. They're younger then me to trot of to the shed in the dark.

Meat loaf is nice made of mince.

It slices well when cold..........makes quite a lot of left overs though LOL

I'm working my way through our freezers and larder and making a menu plan. We seem to have eaten mainly leftovers for most of the past 3 weeks and the freezers still seem quite full. But I cooked a big batch of mince and made shepherds' pies to put back in the freezer.

jean you can make pasties or a plate pie with mince.
or bolognese sauce. Or cook it with carrots and tomatoes (tinned0 with dumplings.

Used to eat it on toast, but trouble with Gall bladder , so cut back on the fat ,I aim to give whatever I make into cookies etc, to friends and neighbours...I am just begining to sort everything so I now try and plan my shopping list, always bought more than we need ,needed a kick up the bum and do it!!

got the bug now, sorted acupboard out found a big lump of cheese after I
cut the green bits off I shall make cheese and onion pasties, lol
