Idea about making ice-cream

We are doing a curry for the parish lunch so I have been having a go at making kulfi (the Indian ice-cream).

To do this you simmer whole milk very gently until it is half its volume before mixing it with cream and condensed milk and freezing it.

It comes out rich and smooth with no ice crystals.

This has set me to wondering if the way to not get ice crystals with an ice- cream maker would be to simmer the water out of the milk before making it.

What do you think?

no idea but as part of science week kids at Zoes school made ice cream in 5 minutes and apparently it tasted lovely and no ice crystals . Amazing what you learn from your kids schooling.
