There is a tree on Ancestry.co.uk with Mary Elizabeth Armstrong born 1855 in Bridgeton and she will be on 1861 census as born in Scotland.

Neither of the trees on Ancestry has a source for Mary Elizabeth's birth, although one of them has an exact DOB (7 April 1855). Also, neither of them has her parents. No birth is coming up on scotlandspeople for her. There are two for a Mary Armstrong in Glasgow in 1855 but not in Bridgton.

I think you will have to get the birth cert of one of the other children to confirm Jane's maiden name.
