I had a brainstorm at the produce auction today and bought 6 cabbages and about 10 big Brocolli........ we can eat a certain amount of it........and the chickens will get the benefit of a lot of it too........but I'd really like to use it all up in the way of soups or something that I can freeze and use later......

It all only cost me £2(which is why i bought it cos it seemed rude not to) but it seems such a shame to waste any.

I'm a rubbish cook but I'm willing to try to get the most out of it. I'm googling recipes at the mo but don't fancy most of them.

Anyone please got any recipe ideas so I can use it all up???

Any help appreciated xx

( I have also given some away to Mum and Dad and some neighbours and there's still bl**dy loads left lol)

You can freeze them Muffy have you got room? Blanch them first then "open" freeze them, if interested I'll let you have the blanch times etc...

If not, then soup is ya best best.

melt some butter, stir in some onions/carrot or whatever and ya veg, and add some stock. I use small pots in mine too as it helps thicken. I use various pulses too...

I'm so slow I hadn't thought of freezing them like that Whirls. But yes please I'd love to know how to do it.......that's a fab idea.

I've never made soup before ........*blushes* don't I have to whizz it all up in the food processor or something first??? xx

You could freeze it for later use.
Broccoli
Remove the outer leaves and woody parts from the vegetable and wash in salted water in order to remove insects. Cut the broccoli head into smaller pieces and blanch for 3 - 5 minutes depending on size. Immerse in cold water and drain. Pack in plastic containers
Cabbage
Select young crisp cabbages for best results. Wash thoroughly and then shred finely. Blanch for 2 minutes maximum. Immerse in cold water and pack in polythene bags.

your better off open freezing first Muffy (lay them on a tray aprt from each other then freeze, once frozen, remove and then pack into boxes, bags) that way, you can take the Brocoli out in individual portions (ie they wont be stuck together) and the cabbage will be free flowing, otherwise it'll all stick together:)

Agree with Whirls about open freezing, I only blanch broccoli for 2 minutes else you get mush when you cook it...lol

Muffy, I freeze all my veg that I grow/buy. I even freeze left over mash....

My chickens and dogs get my left over mash Whirls.....

I'm chuffed at my bargain now.

When I walked in with it all My Mum and OH rolled about laughing at what a daft bat I'd been.......now I can use it all and have saved shedloads !!!! x

hi there is this recipie

Broccoli and Cheddar Cheese Soup
ingredientsserves four
1 lb (450 g) fresh broccoli
6 oz (175 g) good mature Cheddar, grated
6 oz (175 g) potatoes
1 medium onion, peeled
3 1/2 cups (27 fl oz) 750 ml chicken stock
1 tablespoon sunflower oil
Good pinch Salt and pepper
1/2 teaspoon white sugar

method
1. Chop the onion, potatoes and broccoli, and put half the florets to one side.

2. Heat the chicken stock or water to boiling point.

3. Pour the oil into a large saucepan, fry the onion very gently until translucent and add the potatoes. Give it a stir, add the boiling chicken stock or water and sugar, and cook the potatoes and onions for about 10 minutes.

4. Add half the broccoli, season and cook until tender - about 5 minutes.

5. Pour it into a blender or food processor with the remaining raw florets, and whizz for a few seconds.

6. When the soup is smooth it will still have a lovely texture from the florets.

7. Now pour the soup back into the saucepan, and stir in the grated Cheddar until that lovely deep green is streaked with gold!

Serve with granary or crusty French bread
