whenever we have any coffee evenings or fundraisers, i always make a malteser tray bake, covered in white chocolate. never fails and you get about 40 squares out of it. if i make it at home, its eaten before the next day!!

LOL that reminds me of the "Loose Women" Malteser sponsor where she is making like gingerbread men?/ladies with malteser boobs....LOl

hi there everyone, thought i would share my malteser traybake recipe with you
into a medium saucepan; 4oz hard stork margarine, cut into cubes,1 1/2 tablespoons of golden syrup,8oz dairy milk chocoalte broken into squares,

prepare; take 8oz of digestives ,put into large freezer bag and crush with rolling pin until fine. take 8oz of maltesers and do the same.

on a medium heat melt ingredients in the pan. take care not to overheat or the chocolate starts to separate. once all melted, remove from heat and add crushed biscuits and maltesers. stir well and put back on heat for a minute or two until all nicely mixed. the mixture will be quite stiff at this stage.

spread evenly intoa baking tray or swiss roll tin. rectangular, about1cm deep..press with a knife so it is even all over and then chill for about 20 mins in the fridge until set.

take two 300g bars of white chocolate cake covering. i use dr. oetker. break up into squares into a microwaveable bowl. once the tray bake is set,put the chocolate on high for about 2 mins.check and stir. if not quite dissolved put on for another 30 seconds until all ismeltd. then pour evenly all over traybake and return to fridge until set. when set you should be able to lift off the tray in one piece. with a large knife you can then cut into squares.

I am a bit hit and miss with cake and pastry cooking......last sponge turned out like a frisbee so I use packet mixes instead.......good on you who get it right.....

I loved it if I was on the cake stall because parents and children made a bee-line for it and it was soon sold out, and then I could look round the other stalls..... glad it was a success for you....
