I remarked not long ago that I may aswell buy a whole chicken rather than just the breasts as it works out much cheaper. I can often get 5/6 individual meals off 1 chicken.
Problem is 6 nights a week I am on my own to eat.
Anyway we 'roast' the cluck in the slow cooker. (OH de-bones it 1st) so we both get a roast dinner off it. Or OH just cuts it into sections to be used seperately, then I boil the bones for stock and make a stew out of them with the left over chicken.

We have done paella, currys, served it with a plum and apple stuffing, roasted different bits (legs or breasts) with flavoured honey. I don't bother with the BBQ for just 1, but have done minted chicken, chicken in white wine and mushroom sauce, Chicken in red wine and mush sauce (coq au vin almost), served it with salads, rice, pots and gravy, stirfries, terreyaki chicken

Today we bought a chicken and guess what .....
I have run out of ideas what to do with it lol

Anyone got any recipes or ideas out there ?

edit to say that I should add I often freeze down portions for later use when doing curries or stews etc

Really Yummy this recipe.made it myself.



CLASSIC CHICKEN DIVAN

Broccoli spears, frozen or fresh, cooked
1/4 c. butter
6 tbsp. flour
2 c. chicken broth
1/2 c. whipping cream
3 tbsp. dry white wine
3 chicken breasts, halved & cooked
1/4 c. grated Parmesan cheese

Melt butter; blend in flour, dash salt and pepper. Add chicken broth. Cook and stir until mixture thickens and bubbles. Stir in cream and wine. Place broccoli crosswise in baking dish. Pour half sauce over. Top with chicken. To remaining sauce, add cheese; pour over chicken; sprinkle with additional cheese. Bake at 350 degrees for 20 minutes or until heated through. Broil for 5 minutes until sauce is golden. Makes 6 servings.


c is for cups which is about 3 oz,

I made it and put carrots as well as Broccoli in and it was yummy.

Sue that's hard work lol I do occasionally scan the net for recipes mind I also have a load of cook books here including a chicken book and a panfry meals in under 20mins,or something like that, it might be all-in-one-pan meals.

But I find that other peoples adapted ideas are often better

we went out for lunch yesterday (thankfully not chicken) now although I coat meat in honey I had never thought to roast potatoes and veg in it. They tasted well yummy and something I might do ..I think it will have to be plain honey mind not my flavoured ones.

Errrr Foggy it's a long way to Waitrose from here....... a few 1000 miles infact. But Spain do have chicken vans like the UK have burger wagons everywhere,

Also thats cheating cos all you get is little roast chickens dearer than the huge fresh one, but you still need to serve it some how. lol

lol Muffy ..they do look nice and simple aswell as tasty don't they. often I can't be bothered to flaf about for just me so they have to be quick cook or simple. If they ain't they don't get cooked and I don't get fed ! especially with the summer coming up and cooking gets later and later.

Just me being lazy.....lol....as there is only myself to cook for..

There are two of us, but believe you me, I also get stumped for ideas some times. We eat very little red meat these days. So, I am going to look at the site suggested by Sue, for inspiration.

Julia the site is good as the names are there infront of you and that often gives you ideas ... the only down side is there is no pics ..mind that might be good 'cos then you never know what it should look like lol

I like the easy chick pie recipe ..lol mind I already new the knack of using mush soup in them it was nice to be reminded.
