Gluten free oven scones.

I put egg in with a shake of vinegar to bind the mixture as OH had no Xanthan gum.

I used bread flour too - that's all we had that was gluten-free.

So I made the GF scones today and OH quite liked them. ( GF self raising) Amazed at how many diferent recipes there were. I thought I ought to check the quantities as I hadn't made them for ages. There was even one made with banana to keep it moist ( I knew that you could add a courgette to cake for the moisture but banana....)

Our son has been staying and he has an app that allows him to to get end of the day fresh food. He doesn't use it often as he live just out of his town but put our local very expnsive bread shop on his app. So I had one of their cheese scones for afternoon tea. Lovely lots of cheese, but too much cayenne and a bit heavy going. Not sure I need anything else tonight.
