Just thought how can the surname be Choke though - her surname is Whitehead?

Yes!

Celia Jane Whitehead was born to Eliza in 1866, father recorded as Thomas Whitehead. Eliza was still married to Thomas Whitehead at this time so named him as the father. Thomas Whitehead was in prison in 1841 and still there in 1851. Eliza entered the workhouse in 1857 but by 1871 Eliza and Celia were living with William Cloke, so Celia's biological father could have been either Thomas Whitehead, William Cloke or ? . It's possible that when Celia married she named her father as William (referring to her step-father) and the surname was automatically recorded as Whitehead. .

Ahhh - Tiggit I feel like I have just been on WDYTYA - amazing - never gave that a thought - I have a subscription to BNA but cannot find anything - where did you find the bit about prison?

I didn't find the info, it was from the quote on page 1 from Christina S

In the 1841 and 1851 censuses, Thomas Whitehead born 1820 in Monks Horton, was in Maidstone prison for theft.
