I would suggest that the 1841 found by safc where Thomas is a butcher, is Thomas and Elizabeth Foss.

YOUR Thomas and Elizabeth did have a son, George, but not until after the 1841 census.

and possibly, his death. This one lived in William Lane which is where YOUR family are in 1851.
