Julie.....its called Mascarpone and lime torte and we call it Jays Lime Pie because he made it for us last time they had a barbecue......he is a 6'4" builder and built like a brick ****house.....lol.....so not anything like Nigella.....:0).....

Here goes......

200gm pack ginger biscuits crushed (I have digestive biscuits instead)

50 gm butter, melted

2 x 250 tubs cascarpone cheese.
40 gm icing sugar sifted

Finely grated zest and juice of 2 limes (I have a string pack of them in case they are too small)

50gm dark chocolate melted and made into chocolate leaves

(I haven't got the chocolate because I am not into fiddly little chocolate leaves.......they are lucky to get the lime thingy.....

1. mix together the crushed biscuits and the butter and press into the base of an 18cm spring form cake tin....(I am using a flancase and hope it comes out).

2. Beat together the mascarpone cheese, icing sugar, lime zest and juice and spread over the biscuit base.

3. Chill for 30 minutes, carefully remove the torte from the tin by running a warmed knife around the inside of the rim and decorate the top with chocolate leaves or shredded lime zest.......can't remember Jay putting on chocolate leaves.....

Just a thought, how are you going to chill it if your fridge is broken......it would be OK in a cold place outside though....

Boring roast turkey with all the trimmings on Sunday.........chosen by daughter because she loves it....key lime pie or sherry trifle for puds.

He's done the rubbish, cleaned the fishtank, and cooked the dinner. Hmmmm

I'm just cooking that Spicy chicken and cheese pizza at the mo.

It smells absolutely gorgeous and the few pieces of spicy coated chicken I guzzled before it went in the oven were fab.

REALLY looking forward to my dinner tonight !!! xx

For Easter not really much, but I have made note of all the chicken idea's.

Love the Roast Port which has given me idea's for pork lol
Sunday as OH has the day off we are going to raid the local Chinese and get a take-away.

lol Julia, funnily enough we always say we are feeding the 5,000......how did you know????

7 Grandchildren from 13 down to 1 and a bit (there will be 8 in May)

16 it looks like, but of course the littlies do not eat much, but they all like to take stuff home........and I have to do a load of sausages because they love sausage and mash........but had to cut down on the sweet stuff (trifles and cakes) because they are concerned about intake of sugar for the small ones........shame, the Easter Egg hunt now contains a lot of Babybel cheese, triangles and cheese dunkers and strings, raisins in boxes etc. as well as son mini eggs, etc......
