My OH loves tripe and onions ......... shame really 'cos there is no way I am cooking it for him anymore (I think I cooked it once...yak).

He tells the tale of how nothing was ever wasted food wise. Seems as though his mother once brought a pig's head home and cooked it in the copper boiler :-S

And yes, trotters, brains and all bits inbetween were devoured with relish.

When I first met OH, I was slightly taken aback by the fact that she used to make giblet soup on Christmas Eve.......it was a tradition apparently. Ponged awful it did.... :-(


I quite like some offals - kidneys, liver and I have had stuffed heart.

He also remember the milk man coming round with a horse and cart......good grief, it makes me realise how ol....er....anci......senior in years he is!! ;-)

Sylvia I'm not telling her :-) (M-I-L) I just googled it seems that the pink salmon are lower in calories and fat than the red.

Do I guess correctly that you like salmon :-D

Must try some of the ones you mentioned if I can find them locally :-)

I remember my Dad buying sheeps heads (my poor Mum had to cook them) he fed them to the dogs still had eyes in. I couldn't look at them and the smell was awful

we love salmon .................

one of our favourite dishes is sockeye poached in the oven in either 7-UP with lemon slices or water and lemon slices. We do salmon steaks that way for ourselves, or a whole salmon (minus head, tail and fins :-) ) for company.

we only eat wild sockeye, and very occasionally will buy wild coho.

I even make fish pie with tinned wild sockeye :-D


Don't forget, we live in one of the prime salmon areas .................... we still have "fishing villages" within half-an-hour's drive of Vancouver where the "fleet" goes out to catch salmon, and all other kinds of fish.

The fleet is much diminished from when we first came here, but there is still a significant catch.


We usually try buy the whole fish form the actual boat down at the dock. Steaks we buy from the fish shop or supermarket .... usually fresh, even in winter.

I was raised in Lancashire


Mum often cooked tripe ................. usually in the oven, and poached in milk. Or sometimes cooked and then vinegar on it.

I liked honeycomb tripe with vinegar the best.

Grandmother also used to cook tripe


Mum also used to buy cow's tongue, cook it, then press it. Dad even made his own little gadget to do the pressing. The cooked tongue was put in a large bowl, and a weight had to be applied to press it down. Dad's gadget was of steel, it had a flat "plate" that fitted over the top of the tongue, then there was a screw down vise-type thing that could be adjusted to press the tongue flatter than possible by an ordinary weight.


OH and I both still like pressed tongue .................... and can buy it sliced from the delicatessen in the supermarket here. I guess we buy it 3 or 4 times a summer to have with salad.

I've never taken to brains, or sweetbreads ............. although OH used to eat sweetbreads when we ate out in the UK in the 60s............ they used to sometimes be served as an "appetizer", very occasionally as a main dish.

I do like kidney and liver.

We had tongue in a sandwich yesterday. I love Marmite and my daughter is addicted to it.


I only really like lamb's liver Sylvs....it's more tender than pig's liver.


Not that keen on salmon.........but I like kippers with fresh bread. :-D

Sylvia I am soooo jealous. I wish we could get our salmon like that.
I must try cooking the salmon that way sounds yummy.

We have never been lucky enough to visit Canada but we always wanted to see Toronto and Vancouver one day hopefully :-D

It's not just your OH who remembers such things. When I was a nipper there were 2 milkmen who did rounds in our area and both used a horse and cart. The Wacaden Dairies cart had a walk-in central driving position with platform area's for the milk crates both in front and behind it. That milkman used to let us kids drive the cart up the street mind you the horse knew which houses to stop at any way. The other milkman's cart was a small affair with its driving position a bit like a pulpit immediately behind the horse. That milkman was a miserable so and so who wouldn't let us kids have a go.

I too am partial to Slither and bunions which is very nice with mashed tatties and you can't beat Snake and Pigmy pie when served with a few chips.

I've never tried sweetbreads, the very thought brings a tear to my eye. :-D

Ive been looking back at my requests for information,started about 2008
One request was entitled Chair maker's Father.
I gave minimal clues,yey within 48 hours a group of helpers provided quite a bit.
I the the mean time I was looking at other threads and did not see their postings at the time they were posted to respond to them immediately.
Eristhered scared me off.Collectively they (experiaced) had found a lot.Me (newby) was over awed and back off.
Incorrect reation I know but I felt thick and they seemed like greased lightening.
With the distance of time and since finding my way on these boards I recognise my error.I apologise.Having said that if I'd stuck at it diligently I could now have worked my way back to Noah,Methusela and Lamech.

That said I could murder a cup of tea.
